Zsolt Lukács
Zsolt Lukács is owner and sommelier at Daróg Wine Bar. In 2025, he was honoured with the MICHELIN Sommelier of the Year Award for Great Britain and Ireland, recognising his deep expertise, quiet precision and thoughtful approach to wine.
With over a decade of experience, including time at the Michelin-starred Aniar in Galway, Zsolt’s journey has been shaped by a passion for the artistry, complexity and cultural richness of wine.
At Daróg, he curates a wine list that celebrates small artisan producers who share our values: organic, biodynamic and sustainable. The focus is on wines that express place, heritage and care. Each bottle is selected not just for flavour, but for the story behind it and the people who make it.
Zsolt is also a member of the Irish Guild of Sommeliers. At Daróg, he focuses on creating a thoughtful and relaxed wine experience, grounded in respect for the land and its makers.
Stiofán Feeney, Head Chef
The kitchen at Daróg is led by Stiofán Feeney, a proud Connemara native whose culinary roots are firmly grounded in the west of Ireland. His path has taken him from the classical elegance of The Savoy in London to the historic Sacher Hotel in Vienna, shaping a style built on quiet confidence and thoughtful technique.
A graduate of London’s Savoy Hotel culinary programme, Stiofán has worked in some of Europe’s leading kitchens, including Aroma in Rome, and Aniar in Galway. As Head Chef at the Fisherman’s Pub at Ballynahinch Castle, he developed a reputation for precision and creativity, with a strong respect for seasonality and provenance.
In 2023, he represented Ireland on the world stage at the Young Chef Young Waiter competition in Monaco.
At Daróg Wine Bar, Stiofán brings a clear vision to the table—cooking that’s rooted in skill, shaped by experience, and deeply connected to the west of Ireland.
Clare McEvoy, Sommelier
Clare’s interest in wine grew from a wider curiosity about food, drink and place. She joined Kai in 2021, working alongside sommelier Ruairí Riddle, where she developed a focused approach to shaping wine lists around character and a strong sense of origin.
She completed WSET Level 2 in 2023 and went on to achieve a distinction in WSET Level 3 in 2024. Clare also holds a degree in Geography and English, which continues to inform her interest in landscape, people and storytelling.
She is particularly drawn to organic, biodynamic and low-intervention wines, with a focus on producers whose wines reflect both place and the people behind them.
Edel Lukács
Edel Lukács is the owner and creative driving force behind Daróg Wine Bar. With over fifteen years’ experience in design and marketing across the hospitality sector, she brings a thoughtful approach to how the space looks, feels and evolves.
With a background in design and art, Edel sees Daróg as more than a wine bar. It is a space shaped by creativity, atmosphere and connection. She curates the Gallery Wall, working with local artists and offering a platform to share their work, while shaping the atmosphere of the space through art, design and small details.
Edel also brings a quiet presence of the Irish language into Daróg, from signage and menus to small details throughout the space. Not perfectly spoken, but intentionally visible, helping locals and visitors feel at ease with An Ghaeilge.
Under Edel’s vision, Daróg brings together wine, food, art and design, creating a space that is welcoming, thoughtful and rooted in place.
Daniel Walpole, Chef
Dublin chef Daniel Walpole began his career in hospitality as a kitchen porter while studying at NCAD. Drawn to the pace and craft of the kitchen, he went on to work in several acclaimed Dublin restaurants, including Michelin-recognised kitchens such as Spitalfields, The Pig’s Ear and Richmond.
At Daróg, he works as part of a small kitchen team, contributing to a seasonal menu shaped by quality produce and careful preparation.
