Daróg x Chef Network: The Art of Pairing: Chef & Sommelier in Conversation

Location: Daróg Wine Bar, 56 Lower Dominick St, Galway City
An evening dedicated to collaboration, flavour and the craft of pairing. In partnership with Chef Network, this educational event will explore how a head chef and a sommelier work together to shape a menu. Through a series of small plates and cheeses, each paired with wine, Zsolt will share the sommelier’s perspective, while our Head Chef, Stiofán Feeney, will talk through the thinking behind each dish.
The focus is the working relationship between kitchen and floor. At Daróg, we aim for a fluid approach, where both teams support and influence each other, working together to create balance across a menu.
Throughout the evening, we’ll explore:
Pairing wine with small plates
Cheese and wine pairing approaches
Acidity, texture and weight in pairing
Seasonal thinking
Practical collaboration between chef and sommelier
This will be relaxed and conversational, with space for questions, discussion and connection.

Chef Network is open to chefs at all stages of their career from student chefs to retired chefs.

Our head chef, Stiofán Feeney is a member of The Chef Network Advisory Council. The Advisory Council is a voluntary cross-sectoral group of chefs from across Ireland who all share a passion for driving the industry forward, nurturing future talent, and contributing to positive kitchen culture.
